Antioxidants

Definition: Antioxidants are chemicals that can protect against damage to cells induced by free radicals and other oxidative processes. These processes are normal byproducts of metabolism, but have also been linked to contributing to cancer and other tissue damage when noted at very high levels. Antioxidants are found in a variety of foods, especially in brightly colored fruits and vegetables. Vitamins, such as vitamins E and C, are also considered antioxidants.

It is thought that antioxidants could curb the inflammation associated with contributing to oxidized LDL and the development of atherosclerosis. However, studies examining this are inconclusive: Antioxidants appear to work in some studies, but not in others.
