Shabbat (the Jewish Sabbath) meals are a time for family and delicious food. Delicious doesn't have to mean high in cholesterol. This low-cholesterol Shabbat menu plan provides an evening's worth of low-cholesterol Shabbat (Meat/parve) meals.

This meal plan provides 860 calories (nutrition information per person). Remember that your dietary requirements may be higher or lower depending on your weight, age, and activity level.

1 slice (1oz) Half Whole Wheat Challah (Parve) (1/8th of medium loaf)

1 serving Matzoh Ball Soup (Meat); use 1/12 of the recipe with the following substitutions: 1 small "fryer" chicken (instead of one whole large chicken); egg substitute (instead of eggs); and 3 tbsp vegetable oil.
(Nutrition calculation without salt and pepper to taste; you may lower the sodium content of this dish by using ½ sodium substitute)

1 serving Apricot Chicken (Meat); use 1/6th of the recipe with the following substitutions: ¼ cup light mayonnaise (instead of regular mayonnaise) and 2.5 pounds of skinless chicken (instead of 3.5 pounds).

Side Dish:

1 serving Roasted Asparagus (Parve); use 1/6 recipe.

Dessert:

1 serving Mango Sherbet (Parve)

Tip: These dishes can be made even more heart-healthy by using a non-salt substitute.

Nutrition Information Total For The Meal (per person): 860 Calories, 325 Calories from Fat, Total Fat 36.1 g (sat 5.2 g), Cholesterol 150 mg, Sodium 675 mg, Carbohydrate 44 g, Fiber 4.3 g, Protein 24g.

Although featuring fat, calorie, and cholesterol-lowering modifications, this Shabbat dinner remains calorie dense. Other meals throughout the day should be planned accordingly.
